- 3 glasses of flour
- 1 glass of warm water
- Salt
- 1 egg
What goes in raviolli
- 250 gr of less-fat minced beef
- 1 middle sized onion
- Black pepper
- Red pepper flakes,salt
For cooking
- Butter
- 2 table spoon of tomato paste
- Yoğurt with garlic
- Dried mint
- Sumach (No big deal if you don’t have it)
- Red pepper flakes
Get
the flour a shape of volcano with a hole in the middle:) break the egg
right there in volcano, add little bit of salt. And yess knead the dough
by adding water :) Make sure that dough is neither too solid nor too
soft! Make balls to get some fine pastry leaves when the dough is ready.
Mix minced beef, red pepper flakes, black pepper, salt, grated onion and knead all well.
Cut small squares of the pastry leave and share out the minced beef mixture in these squares.
Fold them however shape you wish to have in your plate:) I prefer the star shape like in my pictures.
Get
the raviolli in boiling water, let it get cooked for about 15-20 min.
Meanwhile let the butter melt, add the tomato paste in and roast it a
bit. Pour roasted tomato paste with butter into the boiling raviolli,
let it cook another 5 min.
Grate some garlic in yoğurt and mix it well.
Get the cooked raviolli in plates, add garlic yoğurt on it, dredge some dried mint, sumac and red pepper flakes.
